Breakfast Popover Muffins ♥

Ingredients ♥
-1 cup flour
-/2 tsp. salt
-3 tsp. baking powder
-4 tablespoons sugar
-3 tablespoons melted butter
-1/2 cup milk
-1 egg, slightly beaten

what to do? ♥

Sift flour, salt, baking powder and sugar together. Add milk and shortening. Mix well. Add egg and mix again. Pour into greased muffin rings.
Bake at 450°F for about 7 minutes.

Makes 8 popover muffins.

Breakfast Sausage ♥

Ingredients ♥
-1 lb. country style or breakfast sausage
-1 1/2 cups shredded cheddar cheese
-1/2 - 1 tsp. salt (or, to taste)
-1/2 tsp. black pepper
-1 tsp. dry mustard powder
-6 slices white bread
-5 eggs
-2 cups half and half
-butter

what to do? ♥

Cooks Note: Milk, Evaporated milk or light cream may be used in place of half and half (half milk/half cream). Or substitute 1 cup sour cream plus 1 cup milk.
In a skillet, sauté sausage until no longer pink; drain. Season with salt and pepper.

Butter the bread on both sides and remove crusts.

Arrange bread to cover the bottom of a 9X13-inch baking pan. Cover with a layer of the sausage, then top with cheese. Combine remaining ingredients and pour evenly over layers in pan.

Cover tightly with plastic wrap and refrigerate overnight so that the bread can absorb the egg.

Bake at 350°F for 40-50 minutes.

Variation: Use chopped country ham instead of sausage.

Makes 6-8 servings.

Yogurt Breakfast ♥

Ingredients ♥
-1 6 to 8 oz. container plain or Greek style yogurt
-1 4 oz. DelMonte fruit cup or 1/2 cup fruit cocktail
-1/4 cup Grape-Nuts cereal or granola
-sugar or honey, to taste (optional)

what to do? ♥

Turn yogurt out into a cereal bowl. If you purchase plain yogurt in a large container (or make your own yogurt), measure out 1 cup.
Add sugar or honey, to taste, to the fruit cocktail. Do not drain.

Top yogurt with fruit cocktail; top fruit cocktail with Grape-Nuts (or crunchy granola).

To convert this breakfast into an after dinner dessert, add 1 tablespoon of cream or whipped cream.

This is a healthy alternative to breakfast cereals; it contains foods from the dairy, fruit and grains group.

Breakfast Sausage and Eggs ♥

Ingredients ♥
-1 lb bulk sausage
-1 large onion, chopped
-2 cloves garlic, minced
-1 tbsp. extra virgin olive oil
-2 slices day-old bread (cut into 1/2 inch cubes)
-1 cup (4 oz.) shredded cheddar cheese
-6 eggs
-1/2 tsp. ground sage (optional)
-2 cups milk
-1/2 tsp. salt
-1/2 tsp. dry mustard

what to do? ♥

In a medium skillet, crumble the sausage and sauté over medium high heat with the onion and garlic in olive oil until browned, stirring often to brown evenly.
In a buttered 12x8x2-inch baking dish, spread bread crumbs evenly over bottom and top with the sausage, then the cheese.

Combine eggs, milk, salt and dry mustard powder. Beat well and pour the mixture over the cheese.

Cover with plastic wrap and refrigerate overnight.

The next morning, bake in a preheated 350°F oven for 30 or 40 minutes, or until set.

Makes 6-8 servings.

Variation: Sprinkle an even layer of Pepperidge Farm seasoned bread stuffing at the bottom of the pan instead of the day old bread. Omit the sage.

Breakfast or Snack Granola ♥

Ingredients ♥
-5 cups quick cooking oatmeal
-1/2 cup wheat germ
-1 cup non-fat dry milk
-1 cup sesame seeds
-1 1/2-2 cups dried fruit, chopped
-1 cup organic flaked coconut
-1/2 cup chopped walnuts or pecans
-3/4 cup slivered almonds
-1 cup vegetable or peanut oil
-1 cup honey

what to do? ♥

For dried fruit, we like a combination of dry apricots, sliced dehydrated bananas, Craisins, raisins, chopped dates, etc. Use what you like best.
Combine all ingredients in a very large bowl and mix well. Warm the oil slightly and mix with the honey. Stir over the granola all at once and mix well using a large wooden spoon.

Spread on oiled cookie sheets or roasting pans and bake (in about 3 batches) at 300F for 20 minutes, turning over in pan halfway through the cooking time. Bake until granola is a nice toasty brown.

Allow to cool thoroughly before storing in airtight containers.

Note: We sometimes add a teaspoon of pure almond extract or ground cinnamon to the oil/honey as a variation. Half of the oil may be substituted with non-hydrogenated virgin coconut oil (found in health food stores and some supermarkets).

Refrigerator Sweet Rolls ♥

Ingredients ♥
-4 cups sifted flour
-1/4 cup sugar
-1 tsp. salt
-1 tsp. grated lemon rind
-1 cup (2 sticks) butter
-1 pkg. active dry yeast
-1/4 cup very warm water
-1 cup milk, lukewarm
-2 eggs, beaten
-1 cup sugar
-1 tbsp. cinnamon

what to do? ♥

Scald the milk by heating it nearly to a boil in a saucepan (tiny bubbles will form around the edges of the pan - milk should reach about 185°F). Remove from heat. Add butter.
Sprinkle the yeast into the warm water; stir until dissolved and set aside for 10 minutes.

In a large bowl, mix flour, 1/4 cup sugar, salt and lemon rind.

Using a pasty blender or 2 knives, cut the shortening into the flour mixture. Stir in the dissolved yeast, lukewarm milk and eggs. Mix until combined.

Cover tightly with plastic wrap and refrigerate overnight.

The next morning, combine 1 cup sugar with 1 tablespoon of cinnamon. Reserve 1 tablespoon and set aside.

Remove dough from refrigerator and divide the in half.

Roll half of the dough out on a well floured work surface into a rectangle shape approximately 18x13-inches. Sprinkle with half of the cinnamon sugar. Roll up tightly, jelly-roll fashion, beginning at the wide side. Cut roll crosswise into 1-inch thick slices. Place, cut side up on a greased baking sheet. Flatten slightly.

Repeat with the remaining dough. Sprinkle tops of rolls with reserved cinnamon sugar.

Bake immediately in a 400°F oven for about 12 minutes, or until centers are cooked through.

If desired, drizzle tops with confectioners icing and sprinkle with finely chopped nuts (optional).

To make confectioners icing, measure 1/4 cup confectioners sugar into a small bowl, add a drop of vanilla and a very few drops of water. Stir until water is absorbed. Add more confectioners sugar or water until the mixture is a good consistency for drizzling.

Makes about 36 small rolls. (Large rolls will require extra baking time).

Easy Pancakes ♥

Ingredients ♥
-1 egg
-1 c. flour
-1 tsp. baking powder
-1 tsp. salt
-1 c. milk

Mix the first four ingredients together. Then add the milk gradually until batter is smooth. Pour batter on greased hot griddle to size desired. Bake on hot griddle until tiny bubbles form around edges; flip and bake another 1-2 minutes until cooked through.
Batter thickens as it sits. If the batter becomes too thick, add a little extra milk. If too thin, add another teaspoon of flour until desired consistency. A thicker batter and a hotter griddle will make thicker pancakes; a thinner batter and a cooler griddle will allow batter to spread for thinner pancakes.

Makes about 12 small pancakes.
Servings: 12 (1 small pancake per serving)

what to do? ♥

Fry Egg & sausage patty. Toast English Muffin. Butter muffin, spread jam on muffin. Top with a slice of cheese, sausage & egg.

Awesome Applebutter breakfast cake ♥

Ingredients ♥
-2 1/4 cup baking mix (like Bisquick®)
-3/4 cup milk
-1/2 cup sugar
-1 large egg
-2 tablespoons butter, melted
-2 cups MUSSELMAN'S® Apple Butter
-1/3 cup sweetened flaked coconut
-1/3 cup pecans, chopped
-1/3 cup sugar
-2 tablespoons butter, melted

what to do? ♥

In bowl, stir together baking mix, milk, sugar, egg and 2 tablespoons melted butter. Pour 2/3 of the batter into an 8x8-inch baking dish coated with non-stick cooking spray. Cover with apple butter. Drop remaining batter by spoonfuls on cake.
Combine last four ingredients and sprinkle on top. Bake at 350°F for 1 hour until cake tester inserted in center of cake comes out clean.

Makes 9 Servings.

Low Fat Banana Shake ♥

Ingredients ♥
-1 1/2 cup nonfat milk
-1 peeled and sliced medium banana, frozen
-1/2 teaspoon vanilla extract, optional
-1/4 teaspoon almond extract, optional
-cinnamon, optional

In blender container, combine all ingredients except cinnamon. Blend until smooth, about 20 seconds.
Pour into glasses and garnish with a sprinkle of ground cinnamon.

Makes 2 servings
