As the gin passes the palette, the cassia and other warm spice notes, such as cardamom and juniper, become prominent. The cassia in particular lingers, encouraging another sip. Country: USA. Created by Leslie Rudd, the founder of Rudd Estate wines, the name comes from an old distillery that he discovered when he was surveying his newly purchased Edge Hill property. He noticed the faintly visible words “Registered Distillery No. 209” painted above the iron doors of what was being used as a hay barn. Whilst the original distillery has been restored, the size and location of the building meant that they had to build a new distillery; which they did on Pier 50 in San Francisco. No 209 Gin uses the best of the traditional Old World distilling techniques and marries them with a passion for excellence, innovative thinking, and a willingness to take risks.
