Damascus steel blades are known for being tough and resistant to shattering, as well as their capability of being honed to a sharp, resilient edge. The Pakkawood handle is constructed of carefully selected foreign and domestic hardwood veneers which undergo a process that creates multiple fused layers of treated hardwoods, making a weather, bacteria and moisture resistant handle that is dimensionally stable. The 32 layers of Damascus steel and VG10 super steel cutting core create an incredibly strong, stain-resistant blade with a 16 degree cutting angle for unmatched edge retention. The hammered finish performs like a hollow-ground cavity to reduce drag and also helps release food easily. The steel meets and forms an undulating line near the edge of the blade, similar to the hamon formed when samurai swords are tempered using a traditional claybaking technique. The 9 1/2-inch blade is long and narrow for a cleaner cut that retains more juices and flavor from food. The full-tang construction and an embossed end cap adds strength and balance, and the handle is designed to fit perfectly into the curve of your grip for a comfortable hold. The blade features the Shun logo emblazoned onto the side, and should be hand washed to preserve the quality.
