This Shun Premier slicing knife combines the look of hand-forged ancient Japanese knives with the superb performance of lightweight Damascus steel and the comfort of contoured walnut Pakkawood handles. Damascus steel blades are known for being tough and resistant to shattering, as well as their capability of being honed to a sharp, resilient edge. The Pakkawood handle is constructed of carefully selected foreign and domestic hardwood veneers which undergo a process that creates multiple fused layers of treated hardwoods, making a weather, bacteria and moisture resistant handle that is dimensionally stable. The 32 layers of Damascus steel and VG10 super steel cutting core create an incredibly strong, stain-resistant blade with a 16 degree cutting angle for unmatched edge retention. The hammered finish performs like a hollow-ground cavity to reduce drag and also helps release food easily. The steel meets and forms an undulating line near the edge of the blade, similar to the hamon formed when samurai swords are tempered using a traditional claybaking technique. This set equips you with three essential knives from the Japanese kitchen-the honesuki, the kiritsuke and a multipurpose utility/butcher knife-for covering a wide range of cutting tasks. Kiritsuke knife: In Japan, using a kiritsuke is a sign of a master chef. A skilled cook can do just about anything with this long-bladed knife, which functions like a chef's knife for all-purpose chopping, thin slicing and mincing. Utility/butcher knife: Excels at breaking down larger pieces of meat into cuts for cooking, and makes quick work of separating meat from bone.
